Happy Sunday y’all! It’s been a pretty hectic couple of days, and now that all the craziness has somewhat subsided, I’m completely exhausted and in need of a nice, long nap. A good solid 9 hours of sleep is all I really want! Nonetheless, I’ve still got tons of chores and things to do around the house. Because I’ve been so busy, this banana nut smoothie bowl has really been a life saver for me in the mornings, and a great afternoon snack for when I get home from school. I love throwing all of my ingredients in my Ninja the night before, refrigerating it, and it’s all ready to blend and go. When I have the time, I’ll pour it into a bowl and make it fancy with nuts and bananas. It’s creamy, energizing, and super duper healthy!
I’ve been love love loving pumpkin seeds recently, and unsalted nuts in general! They’re a great snack for late-night homework runs and a great source of healthy fats. Plus, they’re crunchy and so yummy! I get a giant pack of unsalted nuts from Costco every now and then, and they last for months (because I’m usually the only one who’s eating them). Before I forget: the toppings I listed below in the recipe are just foods that I think pair perfectly with the nutty flavor of the smoothie. I included peanut butter (obviously, because what would one of my recipes be without peanut butter?), nuts, pumpkin seeds, bananas, and more. These are just my personal preferences, but you might want to add more fruit, or maybe completely omit the nuts. Feel free to add whatever toppings you’d like!
Mostly, I’m obsessed with how pretty this smoothie bowl turned out! In addition to making food taste good, making it all nice and pretty is one of the things I love about food photography. Isn’t this smoothie bowl just adorable??
- 1 frozen banana, chopped
- 1 tbsp chia seeds
- ½ cup mixed unsalted nuts
- ½ cup almond milk
- 2 tbsp peanut butter
- mixed unsalted nuts
- pumpkin seeds
- chia seeds
- hemp seeds
- peanut butter
- banana
- Combine all smoothie ingredients in a blender and blend until smooth, around 45 seconds to a minute. Then, pour into a bowl, and top with ingredients of choice. Enjoy!
