Almond Brownies

al•mond brown•ies: (n) a square of nutty, chocolatey goodness, where one bite takes you to a world of crunchy, fudgey, gluten free heaven, leaving you wanting more. In other words, these are not your average brownies.

First of all, let’s get a couple things straight. I’ve raved over so so so many chocolate flavor pairings before (y’all know my unconditional love for chocolate), namely peanut butter and chocolate. Oh, and we can’t forget about the raspberry/chocolate and pistachio/chocolate combos. But almonds and chocolate? Ho-ly crud. You’d expect it to taste similar to the peanut butter and chocolate, but the natural flavor and crunch from the almonds with the smooth, chewy texture of the brownie is something entirely different. Chocolate Chia Pudding (in a mason jar!)

Say hello to thick, chocolatey, chia pudding heaven! Yeahhhh, baby. Ever since I first read Cookie and Kate’s chia pudding recipe, I knew it was time for me to jump on the chia pudding trend. As usual, I’m late. They’ve been popular in the food/health world for quite a while, and since it’s such an easy and delicious recipe to make, I’m kind of surprised that I’m only now sharing this chocolate chia pudding recipe on the blog!

Thing is, I know most people out there enjoy simple, easy recipes that can be made in a flash. This chocolate chia pudding is made directly in a mason jar, so you can prepare the pudding, chill it in the fridge and let it do it’s chia magic, then take it out the next morning and add toppings! Seriously, when they say “under 5 minutes” I literally mean under 5 minutes. And if it’s a lazy Sunday morning, treat yourself by pouring the pudding into a bowl and topping it (so #fancy and #instagrammable). Continue Reading

Hello, friends! I’m coming at ya right at noon this lovely Saturday, with a brand new travel diary. Woo-hoo! First of all, a quick life update: I’ve been gone for a while because, last week, I’ve spent 12+ hours each day at my high school preparing for the upcoming school year. I mentioned this in my 5 ingredient cookie recipe a couple days ago (P.S. I’m so so sorry that post was so short!), which is why I’ve been so inactive lately. I’m dreading the next few weeks to come, but at the same time super duper excited for BTS season!

I mentioned in my London travel guide that, right after spending the last day there, we hopped on a train and traveled up north, to Scotland! I’m currently looking back at the countless photos and all the memories made during that trip, and seriously! The post-UK withdrawals are real. Although we only spent 2 full days there, we managed to squeeze a good amount of fun excursions into the time we had (hint: castles, Mexican food, and a whole lot of fun). Treat yo’ self is a motto that I live by on a daily basis, no joke. Chances are, if my sweet tooth cravings kick in, I’m gonna tell myself, “hey, just treat yo’ self!” This girl has no self control. The thing is, since I’m always craving sweets, somehow I gotta make sure I’m not eating too much sugar, right?

That’s where these 5 ingredient (!!!) chocolate peanut butter cookies come into play.

I’ve realized that even though chocolate and peanut butter are my all-time favorite food combos, I’ve only really done one post featuring them! These choc pb cookies are healthy. Crunchy. Chocolate-and-peanut-butter-y. All they y’s. Best of all, they’re only 5 ingredients! Actually, they’re technically six ingredients, but salt doesn’t count. Peanut butter, cocoa, an egg, honey, baking powder, and salt, then bake and eat. Ready to be devoured in a couple minutes’ time. You know what that means? MORE SWEETS FOR ME.

six days in london

Heya, friends! If you’ve been following my Instagram stories lately, I’ve hinted a little at where I’ve been these past couple weeks. I know I’ve been MIA for a while now, but I have a preeeetty reasonable excuse (if I do say so myself)🤷🏻‍♀️.

I’ve been in LONDON!

Y’all! Ever since I was a little girl, my absolute dream destination has always been someplace in Europe. Italy, Spain, Greece, Switzerland, whatever it might be, I’d always envisioned being able to fly across the ocean and explore a whole new part of the world. And after being obsessed with the history, Harry Potter, and obviously the basic tourist attractions, London jumped up to the tippy-tippy top of my bucket list. I mean, the British accents, gorgeous architecture, and centuries of the royal monarchy had me hooked. I couldn’t wait to experience the city itself.

And now? I’ve been so incredibly blessed with this life changing experience, and I want to share my memories with you. I believe that you, if you ever decide to travel to London, should be able to make use of the time spent abroad to the best of your ability. It goes by FAST. Seriously. As you walk through the city, explore what it has to offer, hours turn into days and suddenly you’re back on an early morning flight home. In this London travel guide, I’ve spent a few days gathering together basically every single thing we did in London and shoving it into one giant blog post. Well, not shove (this post is practically my baby), but it’s a crap ton of information.

So, sit back and relax. Let’s spend six days in London together, shall we?
