Chocolate Chia Pudding (in a mason jar!)

Say hello to thick, chocolatey, chia pudding heaven! Yeahhhh, baby. Ever since I first read Cookie and Kate’s chia pudding recipe, I knew it was time for me to jump on the chia pudding trend. As usual, I’m late. They’ve been popular in the food/health world for quite a while, and since it’s such an easy and delicious recipe to make, I’m kind of surprised that I’m only now sharing this chocolate chia pudding recipe on the blog!

Thing is, I know most people out there enjoy simple, easy recipes that can be made in a flash. This chocolate chia pudding is made directly in a mason jar, so you can prepare the pudding, chill it in the fridge and let it do it’s chia magic, then take it out the next morning and add toppings! Seriously, when they say “under 5 minutes” I literally mean under 5 minutes. And if it’s a lazy Sunday morning, treat yourself by pouring the pudding into a bowl and topping it (so #fancy and #instagrammable).

My all-time favorite toppings (not just for this chocolate chia pudding, but for literally everything from cereal to waffles to oatmeal): bananas, Purely Elizabeth pumpkin granola, peanut butter, and hemp seeds. LITERALLY EVERYTHING. Sometimes I’ll switch out the fruit and/or the granola flavor, but generally this is it. But can you blame me? Banana + peanut butter is a combination sent from the heavens, and I’m sure most of y’all will agree with me 110%.

I totally forgot to mention this, but I kind of won the Purely Elizabeth 100K giveaway a few weeks back? I’ve never won a food-related giveaway in my entire life, so I was SO excited when Elizabeth contacted me over on Instagram. I mean, two bags of free granola? Sold. To all you people who didn’t enter that giveaway: um, what are you doing with your life?? Just kidding, haha (love you guys). But now, in addition to my usual two bags of granola we get every once and awhile from Whole Foods, we now have 4 full bags of granola in our pantry. Expect lots of granola recipes coming your way.

Oh hey! And, I almost forgot that school starts in t-minus two weeks! Ughhh. This would be the perfect breakfast for all of you back-to-schoolers that don’t have time for breakfast in the morning. Don’t skip breakfast! I know you’ve probably heard it too much, but not only are you missing out on breakfast food goodness, you’re skipping the most important meal of the day. If you just know you’re probably going to be in a rush the next morning, no matter how hard you try (story of my life), you could also top the pudding with your fav toppings the night before. The granola might get a little soggy, but that makes it even easier to grab and go in the mornings.

This chocolate chia pudding is not only chocolatey and delicious, but it is also an healthy, grab-and-go breakfast you can make the night before!

Ingredients
Chocolate Pudding
  • 1 cup almond milk
  • ¼ cup + 1 tbsp chia seeds
  • 3 tbsp unsweetened cocoa
  • 1 tbsp honey or agave
Toppings (your choice)
  • bananas
  • peanut butter
  • granola
  • hemp seeds
  • chocolate chips
  • coconut
Instructions
  1. In a mason jar, combine milk, chia seeds, cocoa, and honey. Screw on the lid, and shake to combine. Chill in the freezer for 4-6 hours, preferably overnight.
  2. After chilling, give the pudding a stir to break up any lumps. Either top with your choice of toppings directly in the mason jar, or pour the pudding into a bowl and top with bananas, peanut butter, etc. Enjoy!
