S’mores Brownies

Fireworks, cool summer nights by the lake, makeup sweating off my face… Happy happy fourth of july, friends! Today I’m making these dense, fudgey s’mores brownies. And they’re a teeeeeny bit healthier than your average brownie (just a smidge). Because is there any better way to celebrate America’s 200+ birthday, than with these oh-so-decadent s’mores brownies? If so, tell me ASAP, because your girl seriously wants to know.

Unfortunately for us, watching the fireworks is kind of a hassle in our city. Actually, our city doesn’t even have an annual fireworks display, so we go to the ones in neighboring cities. Can we plz just talk about the parking for a sec?? I’m always the one to get super stressed about finding a place to park, because a) I need a place to take cute pictures, and b) I’m lazy and I don’t want to walk. Honestly there are probably a bajillion other reasons, but I’ll just leave it at that…๐Ÿคท๐Ÿปโ€โ™€๏ธ

Enough complaining. The fourth of July is all aboutย celebrating (and stuffing your face full of food), right? So let’s talk a little bit s’MORE about these sticky, chocolatey brownies. I’ll break it down layer by layer for y’all:

  • Graham cracker crust: I started with HOMEMADE GRAHAM CRACKERS. Yup, I went all the way with these. Also, I’d just forgotten to get them at the grocery store, but I was still determined to make these for y’all. I made one batch of these healthy graham crackers, blended them up, and pressed them into the bottom of a 9×9 inch baking pan (along with the coconut oil, of course).
  • Brownie (aka the star of the show): no refined sugars, slightly healthier, and very very very rich. All you have to do is let the 1 cup of greek yogurt do it’s job, and you’re left with this heavenly brownie filling.
  • Marshmallow Topping: I’ve never actually had marshmallow fluff, because I’m not the biggest fan of marshmallows. Don’t get me wrong, I love s’mores, but marshmallows by themselves has never been my thing. I actually stumbled upon this idea while I was at Whole Foods and spotted this marshmallow creme from Toonie Moonie. I’ll have to give it to ya, it’s actually pretty good.

P.S. In the pictures, you’ll notice some red and blue streaks in the marshmallow topping. That’s because I tried to make these patriotic, but failed miserably once I put these in the oven to broil. Oops.

These delicious s'mores brownies are perfect for the fourth of july, and a fun spin on a summer classic. Layered with a graham cracker crust, chocolate brownie filling, and fluffy marshmallow topping, they are best enjoyed warm and fresh out of the oven.

Ingredients
Graham Cracker Crust
  • 1¼ cup graham cracker crumbs *
  • 5 tbsp coconut oil
Brownie Filling
  • 1 cup chocolate chips
  • 2 tbsp coconut oil
  • 1 cup greek yogurt
  • ⅓ cup coconut agave **
  • 1 tsp vanilla extract
  • 1 large egg
  • 2 tbsp unsweetened cocoa
  • ¾ cup almond flour
  • ½ tsp baking powder
  • pinch of salt
Marshmallow topping
  • 1 cup marshmallow fluff
  • red or blue food coloring (opt.)
Instructions
  1. Preheat oven to 350ยบF.
  2. Line a 9x9 inch baking pan with parchment paper, and spray lightly with oil. I like using the Trader Joe's Coconut Oil Spray. Combine graham cracker crumbs and coconut oil, and press into the bottom of the pan. Bake for 10 minutes, until set.
  3. In a large bowl, microwave chocolate chips and coconut oil in 15 second increments until melted, stirring in between. Add greek yogurt, agave, egg, and vanilla extract.
  4. In a smaller bowl, whisk almond flour, baking powder, and salt. Combine dry ingredients into the wet, and stir until a batter is formed. Pour into the same 9x9 baking pan, over the graham cracker crust, and bake for about 29-31 minutes at 350ยบF. Set to the side to cool completely. If the brownies come out a little underbaked, do not put back into the oven. As it cools, the brownies will continue to "bake."
  5. Once the brownies are completely set, use an offset spatula to spread the marshmallow fluff evenly over top. Place in the broiler for 1-2 minutes, until the tops are lightly browned. Make sure to keep your eye on them, or they'll get too dark and burn! Enjoy :)

* I made my own graham crackers and processed them in my NutriBullet. One recipe of these Healthy Homemade Graham Crackers should do it :) ** Also called coconut nectar If you don't have it, substitute with honey.
