This strawberry peach crumble is fruity, crispy, and a great dessert for an outdoor cookout. It's baked to bubbly, golden-brown perfection, and bursting with summery flavors!
  • 3 cups peaches, diced
  • 3 cups strawberries, sliced into quarters
  • 4 tbsp honey
  • 2½ tbsp cornstarch
  • 3 tbsp lemon juice
  • ¼ tsp salt
  • 1 cup rolled oats
  • ½ cup almond flour
  • ¼ cup pumpkin seeds
  • ¼ cup hemp seeds
  • ½ cup coconut oil, very cold
  • 3 tbsp cane sugar (optional)
  1. Preheat oven to 375ºF
  2. In a large bowl, combine peaches, strawberries, honey, cornstarch, lemon juice, and salt. Stir with a wooden spoon until just combined, then set off to the side for later.
  3. Whisk together oats, flour, pumpkin seeds, hemp seeds, and optional cane sugar. Once mixed, cut in coconut oil with your fingers and work into the dough.
  4. Pour the fruit filling into a 9'' pie dish or a 9x9 baking dish, and sprinkle over the crumble mixture. Bake for 45-50 minutes, until the fruit is bubbly and the crumble topping is golden brown. Enjoy with a scoop of vanilla ice cream!
