Brownie-Stuffed Chocolate Chip Cookies

These brownie-stuffed chocolate chip cookies are giant pieces of heaven, with a bit of chewy cookie and fudgy brownie in every bite. You're going to LOVE these!
Serves: about 16-18 cookies
the cookie dough
  • 1 cup light brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2¼ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cornstarch
  • 1½ cup semisweet chocolate chips
the brownie batter
  • 4 oz chocolate chips (about ½ cup)
  • 2 tbsp sugar
  • 1 egg
  • ½ tsp vanilla extract
  • ¼ cup plus 2 tbsp all purpose flour
  • 2 tbsp cocoa powder
  • ¼ tsp salt
  1. In a large bowl, add the softened butter, brown sugar, and granulated sugar. Whisk until the sugars have been fully incorporated and the mixture is pale and fluffy. Mix in eggs vanilla extract.
  2. In another bowl, mix together dry ingredients (flour, baking soda, salt, and cornstarch).
  3. Mix dry ingredients into the wet until all of the flour is mixed in. Stir in chocolate chips, mixing until chocolate is uniformly distributed in the cookie dough. Cover with cling wrap and chill for 4 hours, preferably overnight.
  4. After making the cookie dough, begin making the brownie batter. In a microwave-safe bowl, add chocolate and butter. Microwave in 30 second increments until completely melted, stirring in between each time. Let rest for about 5-10 minutes until the chocolate has cooled a little. Whisk in sugar, egg, and vanilla until smooth. Add flour, cocoa powder, and salt. Whisk until all ingredients are fully incorporated, then cover with cling wrap and chill for 4 hours, or overnight.
  5. Preheat oven to 350 degrees F. Scoop about 1 tbsp chilled cookie dough (just eyeball it), pressing and flattening into a disk. Scoop about 1 tbsp brownie batter (it should be firm and easy to handle), roll it into a ball, and place in the center of the flattened cookie dough. Scoop a final tablespoon of cookie dough, flatten into a disk, and place on top of the brownie ball. Press down the edges to enclose the brownie. Place onto a prepared parchment-lined baking sheet, and repeat for the remaining dough. The cookies will spread, so make sure they are positioned a couple inches apart!
  6. Bake in preheated oven for about 18-20 minutes, until golden-brown on the edges. Cool for about 20 minutes, and enjoy!
