This kitchen sink soup has quickly become one of my favorites during these cold weeks of winter. It's hearty, packed with veggies, and sure to warm you up in a pinch!

Ingredients
  • 1 onion, chopped
  • 4 stalks of celery, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger root, peeled and diced
  • ½ pound ground spicy sausage
  • 1 large sweet potato, chopped into 1-inch cubes
  • 2 tbsp tomato paste
  • 2 tsp paprika
  • 1 tsp chili powder
  • 4 cups broth (chicken, veg, it's up to you)
  • 2 cups frozen corn
  • 2 cups frozen peas
  • 3 stalks of green onion, chopped
  • salt and pepper
Instructions
  1. In a large stockpot over medium heat, add a little oil and cook onion, celery, ginger, and garlic for 3-5 minutes, until softened. Then, add the ground sausage, breaking up the meat and cooking until no pink is left. Add sweet potato cubes, cooking for an additional minute. Add tomato paste, chili powder, and paprika. Cook until fragrant (about an another minute).
  2. Add broth, bring to a boil, then reduce heat and simmer for 10-15 minutes, until sweet potato is soft and easily pierced with a fork. Add frozen corn, frozen peas, and green onion, stirring to combine and cooking for 1-2 minutes.
  3. Taste the soup, and season with salt and pepper to taste. Garnish with additional green onion if desired, and serve immediately. Enjoy!
