I recently caught a cold, and I’ve been living off of green tea and a lot of coffee to keep me going throughout this past week. I probably shouldn’t be drinking the amount of coffee that I do, but I know I wouldn’t be able to stay awake during class if I didn’t. I’ve been getting less sleep than I did last year, because I now have band rehearsal in the mornings, and I’m up ’til late finishing schoolwork (that’s probably why I got sick in the first place!)

single serving honey pear oats

It’s no secret that breakfast is my favorite meal of the day. Normally, I wake up, open my fridge, and just stare at it, contemplating what I should make. Eggs? Hash browns? Avo toast? Toast w/peanut butter? A yogurt parfait? Pancakes? Waffles? There’s just way too much to choose from!

HOWEVER. There is an exception around this time of year, because I literally know exactly what I want to eat: single serving honey pear oats. Here’s how it goes: the night before, I make a quick batch of steel cut oats. I also prep my pears by slicing them in half, coring them (I! love! fall! fruits!) and storing them in an airtight container. The next morning, I season my pears and throw them into the toaster oven, I add milk to my oats, and microwave that for about 30 seconds. Finally, I’ll add my roasted pears to the oats, and top them with a whole bunch of fun treats.

Now, I’ve made apple baked oats before and they’re so so delicious, but there’s something about a nice, classic bowl of oats on a chilly fall morning that I love. These single serving honey pear oats = an easy weekday breakfast made a whole lot better.

Chocolate Chia Pudding (in a mason jar!)

Say hello to thick, chocolatey, chia pudding heaven! Yeahhhh, baby. Ever since I first read Cookie and Kate’s chia pudding recipe, I knew it was time for me to jump on the chia pudding trend. As usual, I’m late. They’ve been popular in the food/health world for quite a while, and since it’s such an easy and delicious recipe to make, I’m kind of surprised that I’m only now sharing this chocolate chia pudding recipe on the blog!

Thing is, I know most people out there enjoy simple, easy recipes that can be made in a flash. This chocolate chia pudding is made directly in a mason jar, so you can prepare the pudding, chill it in the fridge and let it do it’s chia magic, then take it out the next morning and add toppings! Seriously, when they say “under 5 minutes” I literally mean under 5 minutes. And if it’s a lazy Sunday morning, treat yourself by pouring the pudding into a bowl and topping it (so #fancy and #instagrammable).

This entire week, I’ve had so much fun coming up with yummy, summer-themed recipes, and being able to collaborate with some pretty cool food bloggers. Banana Nut Smoothie Bowl

Happy Sunday y’all! It’s been a pretty hectic couple of days, and now that all the craziness has somewhat subsided, I’m completely exhausted and in need of a nice, long nap. A good solid 9 hours of sleep is all I really want! Nonetheless, I’ve still got tons of chores and things to do around the house. Because I’ve been so busy, this banana nut smoothie bowl has really been a life saver for me in the mornings, and a great afternoon snack for when I get home from school. I love throwing all of my ingredients in my Ninja the night before, refrigerating it, and it’s all ready to blend and go. When I have the time, I’ll pour it into a bowl and make it fancy with nuts and bananas. It’s creamy, energizing, and super duper healthy!

Classic Tableside Guacamole

It’s hard to believe that May is already here… like whaaaat?? Where did April go? I feel like I’ve said this at the end of every month, but 2017 is already moving so fast. Before we know it, summer will be here and I’ll be sitting outside, in 100 degree weather, eating a big slice of bright red watermelon. I can’t wait! The first “official” day of summer is sometime in June, but here in Texas it’s going to feel like it a whole lot sooner. But first, before I get ahead of myself, we have to make it through May. Obviously because Cinco de Mayo is in a couple days, it’s only fitting that I share my classic tableside guacamole recipe with y’all!

One of my all-time favorite restaurants, Mi Dia From Scratch, serves this phenomenal tableside guac. They add in all of the essential ingredients needed to make basic guacamole (onions, avocadoes, tomatoes, etc.), but they throw in sundried tomatoes, bacon, and a whole bunch of other genius add-ins. Although I didn’t add anything fancy this particular batch, I listed them in the recipe below. Feel free to give them a try!
