Cashew Beet Dip

Y’all. The first day of school is already done and I’m EXHAUSTED! I can honestly remember the last day of school like it was yesterday, which makes it so hard to believe that summer’s already over. The long, lazy days of summer are behind us, and are quickly being replaced by long lectures, homework overload, and late-night cramming.

On the flip side, I’m super excited to have a fresh start to a brand new school year. Fall is coming up, which is so so exciting because… BEET SEASON! Woo-hoo! I bet you nothing could top my excitement for the arrival for these exciting autumn veggies.I’ve been waiting a whole year for them, along with pumpkin, brussel sprouts, and eggplant, to come in season. Plus, beets have so many health benefits, including improved blood pressure, brain function, and liver function. Delicious veggies and a happier, healthier you? Sounds too good to be true. But it is :) Today, I used the Gefen organic beets, which come peeled, cooked, and ready to be dip-ified.

Something you should know: I’ve always been a classic chips-and-salsa kinda gal. Mayyybe I’ll sub the salsa with guac, or have an occasional veggie-and-hummus combo if I’m feeling extra healthy. But otherwise, I don’t really love dip as much as I should! Once I tried this, I was mind blown at how impossibly delicious this beet cashew dip is. And when I really think about it, I’m not surprised! Y’all. What could go wrong with the combination of cashews and beets? It’s a match made in heaven, and this dip is a true testament to that.

Also, can we take a moment and talk about these Trader Joe’s chip dippers? They’re specially shaped chips that make it like 100x easier to dip anything, whether it be this beet cashew dip, salsa, guac, whatever your heart desires. Yesterday was Trader Joe’s 50th anniversary, and we just had to stop by and get a few things. These life-changing dippers really deserve some recognition.

I'm kicking of beet season with this quick, delicious, and the gorgeous red color doesn't hurt either :)

Ingredients
  • 1½ cup beets, roasted (about 2 beets)
  • 1 cup cashews, unsalted
  • 2 tbsp lemon juice
  • 1 tsp rosemary
  • ½ tsp thyme
  • salt and pepper
Instructions
  1. In a blender, puree beets until smooth. Add cashews, herbs, lemon juice, and season with salt and pepper. Pulse for several minutes (the mixture will be very thick, so be patient with it!), until there are no chunks left. Pour into a bowl, garnish with a pinch of rosemary, and serve with your favorite chips!

    omg I got the same chip dippers yesterday too and I’m obsessed with them because it requires less effort to get the same amount of dip on my chip compared to dipping with a regular chip #lazygirlprobs
