Hey guys… I’m back! I am seriously SO sorry I have been gone for over a month! I intended to post last Thursday, but I was super jet lagged from coming back from my trip to China. It’s a 13 hour time difference, so you can imagine how exhausted I was coming home from a 16+ hour flight! I had a blog post planned, but I was so caught up having fun with family that I just didn’t get the time to write it. I promise I won’t take a break for this long ever again… I want to be more consistent with posting from now on.
With that being said, I’m starting a new “favorites” series that I will post at the end of every month. I know it’s the first day of September (ahhh finally!), but let’s just pretend that I posted this yesterday, okay? ;) Hope y’all enjoy!
I’m totally obsessed with these blueberry pancakes! I’ve been having them pretty much every single day😂 What I love about this recipe is that it tastes just like a regular pancake, but with way less sugar and butter. I used whole wheat flour, which made it even yummier. I also popped in some blueberries while they cooked, but you can add whatever you want to customize it to your preference (cinnamon, other fruits, etc.). You can find the recipe here!
I made these M&M muffins for my friends last week (see more on this Instagram post), and had a couple for myself too:) I’ll be posting a recipe for these pretty soon, so be on the lookout for that. These are super yummy and customizable, just like the pancakes! You can add whatever candy you’d like – I chose m&m’s because that’s all I had at the moment.
I have been obsessed with orzo lately! If y’all haven’t heard of it, it’s pretty much a type of pasta that resembles rice or grain – and it’s SO good! It can be a perfect dinner for when you’re busy and you need something quick to make… just cook the pasta, top it with your favorite sauce, sprinkle a little salt and pepper on top, and you’re good to go. You can even make a little extra and eat it for lunch the following day!
PB protein balls
I mentioned this in an Instagram post a while back, but these are my almond butter chocolate chip protein balls! They’re so simple: 3/4 cup of oats, 1/2 cup of almond butter (or peanut butter), 2 tablespoons of honey, 1/2 cup of chocolate chips, and 1/4 cup of ground flax seed. Mix them all together, roll them into balls, and chill them for an hour until they’re somewhat solid. These are a sweet, protein-packed snack you can have after you come home from work or school!

I’ve made this a couple times already, and I’m sure my family’s already sick of it by now.
