It’s hard to believe that the last day #cookoutweek is finally upon us. This entire week, I’ve had so much fun coming up with yummy, summer-themed recipes, and being able to collaborate with some pretty cool food bloggers. I’ve covered a delicious classic tomato bruschetta appetizer, green grilled pizza entreé, and finally, I’m sharing a strawberry peach crumble for dessert! Cobblers/crisps/crumbles have been super trendy this summer (well, basically every summer), and I’m completely loving it. Baked to bubbly, golden brown perfection, this crumble is the dessert for any outdoor summer get together.
I’ve added pumpkin seeds and hemp hearts for added crunch, and I’ve left out the sugar in the crumble topping because the natural sweetness of the fruits is sweet enough for me. During the summer, a little bit of honey in the fruit is all I really need. During any other season, though, if you randomly want to make this for whatever reason, I’ve included a couple tablespoons of sugar in the recipe below.
- 3 cups peaches, diced
- 3 cups strawberries, sliced into quarters
- 4 tbsp honey
- 2½ tbsp cornstarch
- 3 tbsp lemon juice
- ¼ tsp salt
- 1 cup rolled oats
- ½ cup almond flour
- ¼ cup pumpkin seeds
- ¼ cup hemp seeds
- ½ cup coconut oil, very cold
- 3 tbsp cane sugar (optional)
- Preheat oven to 375ºF
- In a large bowl, combine peaches, strawberries, honey, cornstarch, lemon juice, and salt. Stir with a wooden spoon until just combined, then set off to the side for later.
- Whisk together oats, flour, pumpkin seeds, hemp seeds, and optional cane sugar. Once mixed, cut in coconut oil with your fingers and work into the dough.
- Pour the fruit filling into a 9'' pie dish or a 9x9 baking dish, and sprinkle over the crumble mixture. Bake for 45-50 minutes, until the fruit is bubbly and the crumble topping is golden brown. Enjoy with a scoop of vanilla ice cream!
