When life gives you lemons, you trade them for coffee. Afterwards, scroll down to the bottom of this post and make my chocolate coffee cupcakes. It should be a basic rule of thumb in our everyday lives, in my opinion. Why not incorporate everyone’s favorite morning drink with everyone’s favorite sweet treat? These cupcakes are basically a match made in heaven.
Mother’s day is coming up, which gave me the perfect opportunity to try and create the perfect dessert that all moms are sure to love! They’re infused with a freshly-brewed coffee flavor, filled with melted chocolate and topped with a generous amount of chocolate-coffee buttercream frosting. I even made it a little bit better by incorporating one of my all-time favorite ingredients ever… coconut oil. What’s not to love? Be sure to treat your moms this weekend with a nice brunch, lots of flowers, and these delicious chocolate coffee cupcakes!

Guys… I don’t even know where to begin with these. Stuffed with luxurious Nutella and chocolate chips, these cookies are a fun and delicious twist on a classic chocolate chip cookie. Mmm! I don’t know about y’all, but growing up, I’d always have a quick shortbread or Girl-Scout cookie phase, but I’d always end up coming back to the good ol’ chocolate chip. I’ve always loved the warm, chocolatey, chewy-on-the-inside and crunchy-on-the-outside taste/texture of the cookie, and it’s been my favorite for pretty much my whole life. Can you blame me?

First of all, let me just say that I’m not the biggest fan of nutella. Yes, I’m serious. To me, the spread is overly sweet and processed, and makes me sick to my stomach. In fact, my friends look at me like I’m mental when I say I don’t like it!
However, I was scrolling through Pinterest when I saw a recipe for homemade Nutella. Like most foods (cookies, cake, etc.), I wondered if Nutella would taste better if I made it myself. It’s pretty easy – a small matter of blending up some hazelnuts and flavoring it with some cocoa, of course, and some other ingredients, such as honey and vanilla.

I have been begging on my knees for an ice cream maker for the longest time… almost begging-on-my-knees pleading for one, especially since warmer weather days are not far ahead of us! You can imagine my excitement when this Cuisinart 20-Quart Ice Cream Maker arrived in my mail last Saturday. I immediately took this out and started experimenting recipes with it.
Obviously, the first flavor I set out to try was a classic vanilla ice cream, which is a must-have for everybody. Not only is it delicious, it’s a base recipe that you can add so many different flavors to (chocolate, strawberry, peanut butter, etc.). The possibilities are endless! I know that there are a ton of vanilla ice cream recipes out there, but I really just wanted to share my own.
