When life gives you lemons, you trade them for coffee. Afterwards, scroll down to the bottom of this post and make my chocolate coffee cupcakes. It should be a basic rule of thumb in our everyday lives, in my opinion. Why not incorporate everyone’s favorite morning drink with everyone’s favorite sweet treat? These cupcakes are basically a match made in heaven.

Mother’s day is coming up, which gave me the perfect opportunity to try and create the perfect dessert that all moms are sure to love! They’re infused with a freshly-brewed coffee flavor, filled with melted chocolate and topped with a generous amount of chocolate-coffee buttercream frosting. I even made it a little bit better by incorporating one of my all-time favorite ingredients ever… coconut oil. What’s not to love? Be sure to treat your moms this weekend with a nice brunch, lots of flowers, and these delicious chocolate coffee cupcakes!

4th of July

Happy 4th of July, y’all! I hope you’re out and about with your family, throwing a party, hanging by the lake, or watching the fireworks burst against the night sky. Whatever you’re doing, you’re definitely going to need something America-themed to eat, and I have just the roundup here for y’all today, including veggie burgers with guac with a side of strawberries, and some adorable red-white-and-blue cupcakes for dessert.

Veggie burger: What’s more American than a good-old fashioned burger? Nothing. I typically don’t enjoy shoving huge hunks of meat down my throat, in addition to a belly-stuffing bun and burger toppings. That’s why I was stumped on what to make this Fourth of July, well, Fourth-of-July enough. Then, as I was scrolling through Pinterest (as usual), I happened to stumble upon this delicious sweet potato veggie burger recipe from Veggie Primer. It’s an absolute genius idea, and a perfect vegan meal for the Fourth of July! If the veggie pattie isn’t enough for you, Margaret also includes a homemade guacamole recipe to go with it. The recipe calls for only a couple of ingredients – sweet potato, pinto beans, cumin (I ended up using chili powder), rolled oats, and salsa…

…and, because there’s no eggs, you can grill it however long you want without having to worry about the risk of undercooking it!

Red, white and blue cupcakes: I’ve actually had this one planned for quite a while, and cupcakes are such a timeless classic that can be made for pretty much any occasion. I honestly just made my favorite vanilla cupcake recipe, split the batter in half, and dyed one red and one blue. I layered the two in some silicone cupcake liners, and iced them with my favorite cream cheese frosting. This was definitely a YOLO meal, but it was so worth it :) I also didn’t take any pictures of the process of making the cupcakes, because I’m sure everyone has their own favorite recipe that they can use!

I would like to say that living here in this great country is something you should never take for granted. As we go about our everyday lives, we must remember that every single second of our lives is a blessing. I cannot even begin to express how lucky I am to live in America, and wake up every single day knowing my family and I are safe. We spend too much time insulting, judging, and cursing, and not enough time acknowledge that today is a day to celebrate this country, and the people who fought for it. Here’s a quick little thank you to everyone who is working hard to make this country a better place!
