Summer! Watermelon Lemonade! So! Much! Excitement!

Confession: I haven’t had lemonade in a hot minute. The last time I had it was when I was little, and I know that it was one of my favorite summer drinks growing up! We’re already a couple weeks into summer break, and I haven’t even really thought about actually enjoying the warmer weather. Last week, I was busy at my high school preparing for the upcoming school year already! Thankfully, that’s all over now, and I can seriously start to get in a summer state of mind.

In the recipe card down below, you’ll know that I’ve added an optional ingredient… rosemary. Adding herbs to lemonade might seem a little strange at first, but trust me, it adds such a subtle, fragrant flavor! Rosemary pairs so well with the sweet watermelon and it’s something I’ve done for almost all of my watermelon recipes. This lemonade tastes amazing without it, but why not?

This watermelon lemonade is something that I actually accidentally made while trying to make a watermelon/lemon flavored frozen yogurt (which totally failed, and turned into a block of ice. literally). I ended up trying to make that same frozen yogurt three more times, before I finally gave up. Then, I tried to make a smoothie, but the juices kept separating and the texture was awful. Finally, I decided to take out the yogurt, add more watermelon and lemon juice, and BAM. Lemonade!

This drink is absolutely perfect for relaxing by the poolside on a hot summer’s day, or even a nice, cool drink to sip on while watching Netflix. Oh, and you could even pour this mixture into popsicle molds! That would be soooo cute. Actually, let me know if you give that a try!

Ingredients
  • 6 cups watermelon, chopped
  • 1 cup lemon juice (aka the juice of about 4 lemons)
  • 1 cup water
  • ¼ cup honey
  • ½ tsp dried rosemary (opt.)
Instructions
  1. Place watermelon, lemon juice, water, and rosemary in a large blender. Cover and blend until smooth. Strain through a mesh strainer into a pitcher. Serve immediately, or refrigerate for up to a week. Enjoy!

    AHMAGGAAAHHHDD I HAVE DIED AND GONE TO HEAVEN! Water melon is my favourite thing in the world as it is but I have never had it as a drink! With lemon too! What am i waiting for seriously!!!
